Olivetta introduces a refined, Mediterranean-inspired retail experience to the new Sydney Fish Market. Delivered by Interior Seven, the 75sqm shop fitout was managed from initial planning through to final handover, with all trades coordinated to meet programme requirements and uphold the design vision. Custom joinery was manufactured in-house and installed by the team, ensuring quality control, precise detailing and on-time delivery.

THE BRIEF

The design, led by Maria and the team at McCartney Design in collaboration with owner Karl Schuster, was shaped by a clear brief: to appeal to two distinct audiences – affluent urban consumers seeking unique retail experiences, and younger gourmands and food enthusiasts drawn to rare and premium produce.

This vision was realised through a contemporary environment inspired by traditional oil production settings. Mediterranean architectural cues, including natural travertine stone and Greek mosaics at the entry, were reinterpreted through a modern lens. The concept centred on creating a “modern temple to olive oil” – elevated, textural and immersive.

That’s the Finish was engaged by Gene Thomas from Interior Seven to develop an organic, stone-like textured finish using a bespoke colour palette. To achieve this, the team utilised Calce Liberty Stone Marmorino to produce a custom colour in the studio, which was then precisely matched in X-Bond Microcement for the project’s joinery elements. That’s the Finish’s studio sampling technician, Sonja Perkovich, who specialises in colour matching and sampling, ensured a seamless transition between the two finishes.

CHALLENGES & SOLUTIONS

Early engagement during the cost planning phase, Working within a compact footprint required the space to perform efficiently while retaining a sense of openness and premium restraint.

To achieve this, a tall, pergola-like structure was introduced centrally, maximising ceiling height and creating volume without enclosing the space. Extensive perimeter glazing across three sides added another layer of complexity, limiting lighting control. Close collaboration with Aglo Lighting designers resulted in tailored lighting scenarios that balance brightness with ambience throughout the day.

DESIGN HIGHLIGHT

A standout construction detail was the installation of a handcrafted Lebanese mosaic, recessed flush within surrounding finishes – a delicate process requiring meticulous precision.
